Catering Sous Chef Job Description
Menu & Event Planning:
• Writes Seasonal Catering Menus (posted online on “Area 101 Foodvenue”)
• Works with clients in planning special events, including attending event planning meetings upon request, writing themed menus and providing for special requests
• Works with station managers at Charlie’s café and with chefs across campus in coordinating food for large events and chef/café-specific requests.
• Meets and works as a team with MET Event Planner (Jennifer Shemirani), Google event planners and administrative assistants, the facilities department, janitorial staff, security, the audio-visual department, Google safety manager, and contracted event and production companies when planning & organizing events
Management, Communication and Integration:
• Supervises MET team station managers (AM & PM), Kinderplex Chef, MET Director and MET Operations Coordinator, all cooks and catering attendants to ensure event success:
• Integrates Meeting & Events team with the rest of Charlie’s café – Shares equipment, staff and product. Utilizes talent in all areas of the kitchen when appropriate. Creates less work by utilizing product from previously-planned menus in Charlie’s café to cater last minute requests. Continues to work with Dinner crew in production of the weekly TGIF.
• Works with sous chefs at Charlie’s café on various management tasks including continuous review of safety and sanitation issues in the kitchen
Food Quality and Reputation Improvements:
• Developing relationships with colleagues in the company (administrative assistants, other members of Meeting & Events team, regular customers, etc.).
• Applies Google Food Standards (seasonality, nutrition, sanitation, quality, organic, local, and environmentally sound), “Take food to the next level…”
• Plans menus with attention to the final product (flavor, food appearance in terms of color, presentation, and durability for long periods of time; complementary items that will look and taste good together; garnish in agreement with the ingredients of the item).
• Maximizes cooking time and space
• Works with Meeting & Events team on themed events to match food to theme.
• Learns and Attends to company food preferences (Google founders and CEO; kinderplex children and teachers; Pi employees; high profile guests, etc.) by communicating with clients, reading online “Food-Discuss” emails, and evaluating which food was popular or not after an event.
• Contributes to café Blog to communicate about developments in foodservice on campus; writes occasional emails to company to communicate kitchen information and announcements
